GLUTEN FREE FOOD SAFETY

  • Yes! We are a dedicated Gluten Free facility and only produce gluten free products. We are certified by Coeliac Australia. 

  • Yes! Although we are a dedicated Gluten Free facility, we also test our products, and ingredients, to ensure that they have no trace of gluten. 

  • Yes! We Operate under a HACCP food safety program and are audited annually. 

 Shipping & Delivery 

  • Yes! We can deliver to a post office box or parcel locker. 

  • Yes! Our delivery partners will send tracking information to you via email and/or text messages to your phone. 

  • We aim to process and ship all orders within 1-3 business days. 

  • Yes! Online orders may be picked up from our premises in Clayton. Simply select the pickup option at checkout and we will notify you once your order is ready for collection. 

 Bread Making

  • The water should ideally be between 40C - 45C. 

  • This can be caused by poor yeast, a dry dough (liquid ingredients have been inaccurately measured), or a cold dough (dough cools during mixing, shaping or proofing). 

  • This is not recommended. More than one rise may cause the dough to lose its fine, light texture. 

  • Allowing the dough to rise excessively may result in shrinkage during baking, dough collapse or large holes within the loaf. 

  • Overproofing, using too much yeast, water or vinegar may result in large holes within the loaf. 

  • Overproofing may cause the loaf to collapse. Try to reduce the proving time and do not allow the loaf to rise above the bread tin. 

  • The higher the sides of the baking tin, the greater the likelihood that the loaf will suck in at the sides. This can be avoided by using a lower sided tin.

  • The ability to store fresh bread may vary with weather and climate. As we do not use preservatives in our flour, the basic rule is, the warmer the temperature surrounding the bread, the quicker it is to attract mould growth. If you live in a warmer climate, we recommend that you refrigerate your loaf after storing it in a bag or container. In cooler climates, you can store your loaf in a bag or container at an ambient temperature. This should keep the loaf fresh for 2 days. Please note that we recommend that all our loaves are stored in the refrigerator. 

  • Yes! The cooled loaves have excellent freezing and thawing characteristics.
